Course Aims:
To provide the students with the knowledge and skills to supervise Food Safety
Course objectives
By the end of the training session the students will be equipped with the following:
- Discuss microbiology
- Discuss food contamination Hazards and Controls
- Discuss food poisoning and food borne diseases
- Discuss and demonstrate personal hygiene
- Discuss storage and temperature control
- Discuss food spoilage and preservation
- Discuss food premises and equipment
- Discuss cleaning and disinfection
- Discuss pest control
- Discuss how to supervise and manage – HACCP
- Discuss food safety legislation
Course syllabus:
Microbiology, food contamination Hazards and Controls, food poisoning and food borne diseases, personal hygiene, storage and temperature control, food spoilage and preservation, food premises and equipment, cleaning and disinfection, pest control, supervisory management/HACCP, food safety legislation.

- 2 hour exam – 60 questions all multiple choice (must obtain over 40 answers correct to pass)

- Lifelong certificate, with yearly refresher courses recommended
